Ash Gourd Chutney is a slightly tangy and delicious chutney, and a great way to spice up your meals. Ash gourds or winter melons are available almost year-round in the US. Look for them in Indian and Asian grocery stores or whole foods stores.

Ash gourd is extremely low in calories, and as such great for any weight-loss diet. In fact, ash gourd is used to treat obesity as it’s a metabolism booster and prevents carbohydrates from converting into fat. This is an easy recipe, and does not have onion or garlic. Ash gourd chutney makes a great dip and spread.

Servings: 6-8
Cooking Time: 10 minutes

Ingredients

  • 2 cups ash gourd, grated
  • Turmeric powder, a pinch
  • 1/4 tsp tamarind paste
  • Salt to taste

For Masala

  • 1 tsp vegetable oil
  • 2 tsp chana dal (split bengal gram)
  • 1 tsp mustard seeds
  • 5-7 red chillies (adjust to taste)
  • Asafoetida powder (hing), a pinch

Preparation

  1. Heat oil in a small pan, and add the asafoetida powder, chana dal, and mustard seeds. Fry until the seeds start to turn golden brown.
  2. Add the red chillies and fry until lightly browned. Remove in a bowl and let cool.
  3. In a blender, grind the cooled masala ingredients into a coarse powder. Add the grated ash gourd, turmeric, tamarind, and salt and pulse for a couple of seconds into a coarse paste.
  4. Serve the ash gourd chutney with plain rice or use as a spread or dip.
