This Bell-Pepper-Cabbage Fry not only looks great but tastes great, too, and is easy to make. Serve it with plain dal and rice. If you’re looking for a quick stir-fry that’ll awaken your tastebuds, try this curry. This curry would go well with Indian roti as well.

This multi-vegetable curry is packed with nutrition, providing you a way to get your vitamins, such as vitamin A, B, and C as well as calcium.

Servings: 2-4
Cooking Time: 15 minutes

Ingredients

  • 1 1/2 cups, cabbage, shredded
  • 1/2 cup bell-pepper, cut into small cubes
  • 1/2 cup carrot, sliced into oval-shaped pieces
  • 3-4 tsp vegetable oil
  • 1 tbsp cilantro (coriander leaves), finely chopped
  • Salt to taste

For Seasoning

  • 2 tsp sesame seeds
  • 1 tsp mustard seeds
  • 4-5 green chillies, slit and deseeded
  • 1/2-inch piece ginger, julienned (cut into thin strips)

Preparation

  1. Heat oil in a large stainless steel skillet. Add the mustard and sesame seeds, and fry until the mustard pops.
  2. Add the carrots, and stir-fry on high heat and stir-fry for 1/2 a minute. Add the bell-pepper and saute for 1/2 a minute.
  3. Add the cabbage and salt and stir for a minute.
  4. Sprinkle the chopped cilantro and cover and cook for a minute. Remove in a serving dish.
  5. Serve the bell-pepper-cabbage fry with rice and dal. or with roti.
