Cauliflower-Onion Saute

Ingredients
- 6 cups cauliflower, cut into small florets
- 2 cups onion, cut into 1/2-inch thin strips
- 2-3 tsp vangibhath powder (store-bought or home-made)
- 2-3 tsp red chilli powder
- 1/4 tsp turmeric powder
- Asafoetida powder (hing), a pinch
- 1 tsp mustard seeds (rai)
- 5-6 curry leaves
- Salt to taste
- 3-4 tsp vegetable oil
Preparation
- Heat the oil in a wide skillet. Add the asafoetida powder and mustard seeds. As the seeds start to pop, add the curry leaves and saute for a few seconds.
- Add the onions, cauliflower, turmeric, and salt, stir, and cover and cook on medium heat for 3-4 minutes until the veggies are tender.
- Remove the lid and saute on medium-high heat until the cauliflower and onion are lightly browned.
- Add the vangibhath powder and red chilli powder and saute for 2 minutes. Remove the cauliflower-onion saute from heat.
- Serve the cauliflower-onion saute with plain rice.
