Cauliflower-Onion Saute

Cauliflower-Onion Saute is a quick vegetarian and vegan curry you can rustle up in no time. If you’re tired of your regular cauliflower curry, try this healthy and easy recipe.

A good source of potassium and fiber and low in calories, fat, and cholesterol, cauliflower is a great addition to a heart-healthy diet.

Cooking Time: 15 minutes

Ingredients

  • 6 cups cauliflower, cut into small florets
  • 2 cups onion, cut into 1/2-inch thin strips
  • 2-3 tsp vangibhath powder (store-bought or home-made)
  • 2-3 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • Asafoetida powder (hing), a pinch
  • 1 tsp mustard seeds (rai)
  • 5-6 curry leaves
  • Salt to taste
  • 3-4 tsp vegetable oil

Preparation

  1. Heat the oil in a wide skillet. Add the asafoetida powder and mustard seeds. As the seeds start to pop, add the curry leaves and saute for a few seconds.
  2. Add the onions, cauliflower, turmeric, and salt, stir, and cover and cook on medium heat for 3-4 minutes until the veggies are tender.
  3. Remove the lid and saute on medium-high heat until the cauliflower and onion are lightly browned.
  4. Add the vangibhath powder and red chilli powder and saute for 2 minutes. Remove the cauliflower-onion saute from heat.
  5. Serve the cauliflower-onion saute with plain rice.
