Chayote Pear Curry

Chayote Pear Curry is a simple yet great-tasting curry. Made with bangalore kathrikai and fresh coconut, this vegetarian/vegan curry is a South Indian recipe and a great accompaniment for rice.

Servings: 3-4
Cooking: 20 minutes

Ingredients

  • 4 cups chayote pear (aka banglaore kathrikai), cut into small cubes
  • 2 tbsp coconut, freshly grated
  • Salt to taste

For Seasoning

  • 4 tsp vegetable oil
  • 1/4 tsp turmeric powder
  • 2 tsp chana dal (yellow lentil) or urad dal (black gram/lentil)
  • 1/2 tsp cumin seeds (jeera)
  • 1/2 tsp mustard seeds (rai)
  • 2 green chillies, slit and halved
  • 1 tsp ginger, grated
  • 1 red chilli, broken into 2 pieces
  • 1/4 tsp red chilli powder (optional)
  • 6-7 curry leaves

Preparation

  1. Boil the chayote pear with some water and salt in the microwave for about 4 minutes.
  2. Heat oil in a saucepan. Add the chana dal and fry until almost golden. Add the cumin and mustard and fry until they start to pop. Add the red and green chillies and fry for a few seconds. Then add the curry leaves and fry for a second.
  3. Add the turmeric powder, red chilli powder, and the cooked chayote pear and cook on medium heat for about 4 minutes.
  4. Sprinkle the fresh coconut and saute for a few seconds and remove from heat.
  5. Serve the chayote pear curry with plain rice and pappadums.
