Cheesy Tortellini
Lightly spiced, this Cheesy Tortellini is a filling and nutritious meal for a cold winter night. The ricotta cheese and cream add a healthy serving of calcium.
This dish is an easy vegetarian recipe and is great for kids and adults.

Ingredients
- 4 cups cheese tortellini (store-bought)
- 2 tbsp walnuts, chopped
- 2 tbsp pine nuts
- 2 tbsp butter
- 3 tbsp cream
- 1/4 cup ricotta cheese
- 2 tsp thyme, frsh or dried
- 2 tbsp parsley, chopped
- 1 tsp black pepper powder
- Salt to taste
Preparation
- In a large saucepan, add 12 cups water and bring it to a boil. Add the cheese tortellini and cook until just about tender (al dente). Drain and set aside.
- In a bowl, combine the cream and ricotta cheese and use a hand-whisk to whisk until well-blended and set aside.
- Heat the butter in a saucepan on low heat. Add the walnuts and pine nuts and saute until golden.
- Add the parsley, thyme, and salt and stir.
- Stir in the drained tortellini and the whisked cream and ricotta cheese.
- Stir in the black pepper powder.
- Garnish the cheesy tortellini with parsley and serve immediately.
