Cheesy Tortellini

Lightly spiced, this Cheesy Tortellini is a filling and nutritious meal for a cold winter night.  The ricotta cheese and cream add a healthy serving of calcium.

This dish is an easy vegetarian recipe and is great for kids and adults.

Servings: 4-6
Cooking Time: 25 minutes

Ingredients

  • 4 cups cheese tortellini (store-bought)
  • 2 tbsp walnuts, chopped
  • 2 tbsp pine nuts
  • 2 tbsp butter
  • 3 tbsp cream
  • 1/4 cup ricotta cheese
  • 2 tsp thyme, frsh or dried
  • 2 tbsp parsley, chopped
  • 1 tsp black pepper powder
  • Salt to taste

Preparation

  1. In a large saucepan, add 12 cups water and bring it to a boil. Add the cheese tortellini and cook until just about tender (al dente). Drain and set aside.
  2. In a bowl, combine the cream and ricotta cheese and use a hand-whisk to whisk until well-blended and set aside.
  3. Heat the butter in a saucepan on low heat. Add the walnuts and pine nuts and saute until golden.
  4. Add the parsley, thyme, and salt and stir.
  5. Stir in the drained tortellini and the whisked cream and ricotta cheese.
  6. Stir in the black pepper powder.
  7. Garnish the cheesy tortellini with parsley and serve immediately.
