Chilled Rice Has Fewer Calories – Do you like rice but are scared of all those carb calories? New research shows that there might be an easy way to reduce calories in rice.

Sri Lankan researchers found that simmering rice with coconut oil for about 40 minutes, cooling it and then refrigerating it for 12 hours can reduce its calories by 60%. This method of cooking makes the rice less digestible, and the body absorbs less of it. According to researcher Sridhar James, the cooling process helps make the cooked rice a resistant starch. Reheating cooled rice does not affect the resistant starch level.

Chemically speaking, what happens is that “Cooling for 12 hours will lead to formation of hydrogen bonds between the amylose molecules outside the rice grains which also turns it into a resistant starch.”

The team is testing other varieties of rice and cooking oils to see which ones would work . According to nutrition experts, resistant starch could be healthy as it seems to improve digestion and help regulate blood glucose levels. But more research is needed to understand the full potential of this research.
