Corn Curry
This easy corn curry is simply delicious. Without any heavy spices, this curry enhances the sweet taste of corn. This vegetarian side goes well with plain rice. Corn provide a lot of fiber and protein.

Ingredients
- 2 cups corn kernels, fresh (if using canned, drain before using)
- 3/4 cups onion, finely chopped
- 2 green chillies, finely chopped
- 2 tbsp cilantro (coriander leaves), chopped
- 2 tbsp lime juice (adjust to taste)
- Salt to taste
For Seasoning
- 4 tsp vegetable oil
- 1 tsp mustard seeds
- 5-6 curry leaves
Preparation
- Heat the oil in a skillet. Add the mustard seeds and fry until they start to pop. Add the green chillies and fry for a few seconds. Add the curry leaves and fry for a few seconds.
- Add the onions and salt and saute for about 4-5 minutes on medium heat until translucent.
- Add the corn and cilantro leaves along with salt as needed. Cover and cook on low heat for 6-7 minutes or until corn is tender but not overcooked.
- Remove the corn curry from heat, and stir in the lime juice.
- Serve the corn curry with plain rice.
