Edamame Salad is a simple and easy salad with edamame — fresh and tender green soybeans. Edamame is very filling and nutritious.

Edamame are popular in Asia and are usually boiled in the pods along with salt and served with the pods. Edamame and dried soybeans are rich in carbohydrates, fiber, protein, and also contain omega-3 fatty acids, and folic acid.

Edamame are becoming popular in the US and other countries because of their nutrition.

Cooking Time: 15-20 minutes

Ingredients

  • 2 cups tender edamame (removed from the pods, fresh or frozen)
  • 1 tbsp cilantro, chopped
  • 4-5 curry leaves
  • 2 tbsp coconut, freshly grated or dried
  • Salt to taste

For Seasoning

  • 3 tsp vegetable oil
  • 1 tsp urad dal (split black gram)
  • 1 tsp cumin seeds (jeera)
  • 1/2 tsp mustard seeds (rai)
  • Turmeric powder, a pinch
  • 2-3 green chillies, slit and halved (adjust to taste)
  • or 1/2 tsp red chilli powder
  • 2-3 red chillies, broken into 2

Preparation

  1. If using frozen edamame, rinse, drain, and thaw for 10 minutes.
  2. Heat the oil in a skillet. Add the urad dal and fry until almost golden. Add the cumin and mustard seeds, and fry until they start to pop.
  3. Add the green chillies, red chillies, and curry leaves and fry for a second. Add the edamame, turmeric powder, and salt. Sprinkle a little water, and cover and cook on medium heat until cooked.
  4. Remove the lid and let the water evaporate (if any).
  5. Sprinkle the coconut, and cook for 1 more minute. Remove the edamame salad from the heat.
  6. Garnish the edamame salad with cilantro and serve with a dash of lemon.
