How to Make Cheesy Mushroom Melts – here’s how you can make a great cheesy mushroom melt, perfect for a hearty snack. This is a vegetarian snack recipe.

Ingredients
- Sourdough bread, toasted
- 3 large handfuls of your favorite mushrooms, chopped
- 1 red onion, chopped
- 2 garlic cloves, finely chopped
- 1 tsp oregano, chopped
- 1 tsp rosemary, chopped
- 2 – 21/2 OZ butter
- 3 large handfuls of Emmental cheese
- Black pepper powder to taste
- Salt to taste
Preparation
- Melt the butter in a pan and, once foaming, add the onion and fry on a low medium heat until soft.
- Add the garlic, rosemary and oregano and fry for a minute. Then throw in the mushroom and a bit more butter and cook until the mushrooms are soft and brown.
- Slice the sourdough bread and brush with olive oil. Toast on a griddle pan until toasted.
- While the bread is toasting, add the grated cheese to the pan, take the pan off the heat and stir through until it’s all melted.
- Spoon the mushrooms over one slice of the toasted bread. Top with the second slice.
- Serve the cheesy mushroom melts with a final drizzle of olive oil before serving.
