How to Make Cheesy Mushroom Melts – here’s how you can make a great cheesy mushroom melt, perfect for a hearty snack. This is a vegetarian snack recipe.

Cooking Time: 30 minutes

Ingredients

  • Sourdough bread, toasted
  • 3 large handfuls of your favorite mushrooms, chopped
  • 1 red onion, chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp oregano, chopped
  • 1 tsp rosemary, chopped
  • 2 – 21/2 OZ butter
  • 3 large handfuls of Emmental cheese
  • Black pepper powder to taste
  • Salt to taste

Preparation

  1. Melt the butter in a pan and, once foaming, add the onion and fry on a low medium heat until soft.
  2. Add the garlic, rosemary and oregano and fry for a minute. Then throw in the mushroom and a bit more butter and cook until the mushrooms are soft and brown.
  3. Slice the sourdough bread and brush with olive oil. Toast on a griddle pan until toasted.
  4. While the bread is toasting, add the grated cheese to the pan, take the pan off the heat and stir through until it’s all melted.
  5. Spoon the mushrooms over one slice of the toasted bread. Top with the second slice.
  6. Serve the cheesy mushroom melts with a final drizzle of olive oil before serving.
