Kulfi

Kulfi is a kind of Indian ice cream made with thickened milk and sugar. In India, street vendors sell different kinds of kulfi in summer. Kulfi has a delicate, caramelized taste, and is the best dessert you can have on hot summer days. Since this dessert is made with milk, nuts, and fruits, it is also healthy and full of nutrition.

Servings: 8-10 (depends on the size of the mold)
Cooking Time: 45-60 minutes

Ingredients

  • 8 cups whole milk (or low-fat milk)
  • 3 cups sugar (adjust to taste)
  • 6 green cardamom pods

Preparation

  1. In a large saucepan, add the milk, and cook on medium heat for 30 minutes, stirring frequently to prevent it from burning at the bottom.
  2. Cook until the milk has reduced to half the original quantity.
  3. Add the sugar and let cook for 10 more minutes, stirring frequently.
  4. While the milk is cooking, remove the cardamom seeds from the pods and crush into a powder using a mortar and pestle. Add the cardamom powder to the milk and remove from heat and let cool.
  5. Pour the thickened milk into individual pudding cups, or and ice tray, and freeze overnight or until set.
  6. To serve, thaw the kulfi in the refrigerator for a few minutes until it softens a bit, and scoop it out from the molds. You can top the kulfi with fruits and/or nuts, if desired.

Cooking Tip

To cut down on cooking time, use sweetened condensed milk (14-ounce can) and evaporated milk (12-ounce can), along with 1 cup heavy whipping cream. Combine all in a blender and process until smooth. Pour into molds and freeze until the kulfi is set. Once the kulfi sets, cover tightly with plastic wrap to keep it fresh for a couple weeks.
