Okra Pepper Masala

Okra Pepper Masala is a quick stir-fry you can serve with plain rice or Indian phulka or paratha. This is an easy recipe and a great way to spice up your vegetarian and vegan meals.

Okra is extremely low in calories and fat-free and as such great for weight-loss.

Servings: 4
Cooking Time: 15 minutes

Ingredients

  • 15-20 okra, cut into 1-inch pieces
  • 1/4 tsp turmeric powder
  • Salt to taste
  • 5-6 tsp vegetable oil

For Masala

  • 2 tbsp black pepper corn
  • 1 tbsp coriander seeds (dhania)
  • 1 tsp cumin seeds (jeera)
  • 1 tsp chana dal (split bengal gram/yellow lentils)
  • 4 red chillies

Preparation

  1. Roast the masala ingredients separately until lightly browned and aromatic. Let cool and then grind together in a spice or coffee grinder into a slightly coarse powder and set aside.
  2. Heat 4-5 tsp oil in a wide skillet and add the turmeric powder and okra and saute for a couple of minutes.
  3. Add salt and saute on low heat until the okra is tender.
  4. Sprinkle 2-3 tsp of the masala powder and saute on medium heat for 2 more minutes, and remove the okra pepper masala from heat.
  5. Serve the okra pepper masala with rice or roti.
