Okra Pepper Masala
Okra Pepper Masala is a quick stir-fry you can serve with plain rice or Indian phulka or paratha. This is an easy recipe and a great way to spice up your vegetarian and vegan meals.
Okra is extremely low in calories and fat-free and as such great for weight-loss.

Ingredients
- 15-20 okra, cut into 1-inch pieces
- 1/4 tsp turmeric powder
- Salt to taste
- 5-6 tsp vegetable oil
For Masala
- 2 tbsp black pepper corn
- 1 tbsp coriander seeds (dhania)
- 1 tsp cumin seeds (jeera)
- 1 tsp chana dal (split bengal gram/yellow lentils)
- 4 red chillies
Preparation
- Roast the masala ingredients separately until lightly browned and aromatic. Let cool and then grind together in a spice or coffee grinder into a slightly coarse powder and set aside.
- Heat 4-5 tsp oil in a wide skillet and add the turmeric powder and okra and saute for a couple of minutes.
- Add salt and saute on low heat until the okra is tender.
- Sprinkle 2-3 tsp of the masala powder and saute on medium heat for 2 more minutes, and remove the okra pepper masala from heat.
- Serve the okra pepper masala with rice or roti.
