Okra with Chilli Sauce
Try the simple Okra with Chilli Sauce next time you want a quick side for roti or any other bread. Spiced with chilli sauce, this curry can be hot or mild. If you don’t like garlic, look for a chilli sauce that doesn’t have garlic or make your own.

Ingredients
- 4 cups okra, quartered and cut into 1/2-inch pieces
- 2 cups tomatoes, cut into small cubes
- 1 cup onions, finely chopped
- 2 tbsp chilli sauce
- 1 tbsp cilantro (coriander leaves), finely chopped
- 2 tsp vegetable oil
- Salt to taste
Preparation
- Heat the oil in a wide skillet. Add the onions and salt and saute until lightly browned.
- Add the okra and salt and a sprinkle of water. Cover and cook for 4-5 minutes on medium heat until almost tender, stirring occasionally.
- Add the tomatoes and cook for 2 more minutes.
- Add the chilli sauce and cook for 2 minutes and remove the okra with chilli sauce from heat.
- Serve the okra with chilli sauce with roti or rice.
