Okra with Chilli Sauce

Try the simple Okra with Chilli Sauce next time you want a quick side for roti or any other bread. Spiced with chilli sauce, this curry can be hot or mild. If you don’t like garlic, look for a chilli sauce that doesn’t have garlic or make your own.

Servings: 4
Cooking Time: 20 minutes

Ingredients

  • 4 cups okra, quartered and cut into 1/2-inch pieces
  • 2 cups tomatoes, cut into small cubes
  • 1 cup onions, finely chopped
  • 2 tbsp chilli sauce
  • 1 tbsp cilantro (coriander leaves), finely chopped
  • 2 tsp vegetable oil
  • Salt to taste

Preparation

  1. Heat the oil in a wide skillet. Add the onions and salt and saute until lightly browned.
  2. Add the okra and salt and a sprinkle of water. Cover and cook for 4-5 minutes on medium heat until almost tender, stirring occasionally.
  3. Add the tomatoes and cook for 2 more minutes.
  4. Add the chilli sauce and cook for 2 minutes and remove the okra with chilli sauce from heat.
  5. Serve the okra with chilli sauce with roti or rice.
