Plantain Soft Curry
Plantain Soft Curry is a South Indian vegetarian side that’s very popular. This simple and easy-to-make curry is a staple in South Indian vegetarian meals and served in restaurants. Try it next time you want a quick side for plain rice.

Ingredients
- 5 cups plantain, peeled and cut into small cubes
- 1/4 tsp turmeric powder
- 1-2 tsp lime/lemon juice
- Salt to taste
For Seasoning
- 4 tsp vegetable oil
- 1/4-inch piece ginger, finely chopped
- 4 green chillies, slit lengthwise
- 2-3 red chillies, broken into a few pieces
- 2 tsp chana dal or urad dal (yellow lentil or black lentil)
- 1 1/2 tsp cumin seeds (jeera)
- 1 tsp mustard seeds
- 6-7 curry leaves
- 2 tbsp coconut, freshly grated or dried
Preparation
- Place the cut plantain in a microwave-safe bowl with 6-7 cups water, salt and turmeric powder, and cook for 6 minutes. Let cool. Drain any excess water (a little water is OK).
- Heat the oil in a pan. Add the chana dal and fry until almost golden. Add the cumin and mustard seeds and fry until they start to pop. Add the green chillies and fry for a second. Add the red chillies and fry for a few seconds. Add the curry leaves and fry for a second.
- Add the plantain and stir well. Cover and cook on medium heat for 2 minutes.
- Mash some of the plantain pieces and cook on low heat without the lid for a minute.
- Add the coconut and stir well. Cover and cook the plantain soft curry for a few seconds. Remove from heat.
- Stir in the lime juice just before serving the plantain soft curry.
