Polyunsaturated fats: are these good or toxic?

For better health, we have been trying to use polyunsaturated fats instead of trans fats for over six decades. Vegetable oils such as soybean, sunflower, safflower, and cottonseed oils are considered to be polyunsaturated, the kind that can lower our total cholesterol levels. However, if you don’t know which of these oils to use for what type of cooking, you might unwittingly use the wrong oils and cause yourself some serious damage. Many vegetable oils, when heated to high temperatures for frying foods, can turn toxic because of oxidation. And this can cause inflammation and related health problems.

Restaurants and individuals are all turning to vegetable oils, but they need more education on how to use these oils in order to reap the health benefits these offer. More….
