Potato-Bell-Pepper Fry

Potato-Bell-Pepper Fry is an easy curry you can make when you don’t have too much time to cook. This simple capsicum and potato curry tastes delicious with rice.

Servings: 4
Cooking Time: 15 minutes

Ingredients

  • 2 cups potatoes, cut into medium
  • cubes
  • 2 cups bell-pepper, cut into medium cubes
  • 1 tsp cumin seeds (jeera) – optional
  • 2-3 tsp red chilli powder (adjust to taste)
  • 6-7 tsp vegetable oil
  • Turmeric powder, a pinch
  • Salt to taste

Preparation

  1. Heat oil in a nonstick skillet. Add the cumin seeds and as they start to brown add the potatoes and bell-pepper along with turmeric and salt. Cover and cook on medium heat until almost tender.
  2. Remove the lid and add some more oil, and saute on medium high until browned.
  3. Add the red chilli powder and saute for a few minutes more until the pieces are crunchy.
  4. Serve the potato-bell-pepper fry hot with rice and ghee (clarified butter).
