Potato-Bell-Pepper Fry
Potato-Bell-Pepper Fry is an easy curry you can make when you don’t have too much time to cook. This simple capsicum and potato curry tastes delicious with rice.

Ingredients
- 2 cups potatoes, cut into medium
- cubes
- 2 cups bell-pepper, cut into medium cubes
- 1 tsp cumin seeds (jeera) – optional
- 2-3 tsp red chilli powder (adjust to taste)
- 6-7 tsp vegetable oil
- Turmeric powder, a pinch
- Salt to taste
Preparation
- Heat oil in a nonstick skillet. Add the cumin seeds and as they start to brown add the potatoes and bell-pepper along with turmeric and salt. Cover and cook on medium heat until almost tender.
- Remove the lid and add some more oil, and saute on medium high until browned.
- Add the red chilli powder and saute for a few minutes more until the pieces are crunchy.
- Serve the potato-bell-pepper fry hot with rice and ghee (clarified butter).
