Radish-Greens Sambar
Radish-Greens Sambar is a delicious South Indian soup that’s also healthy. The red lentils provide a lot of protein, while the radish and greens fiber and other vitamins. This sambar goes well with plain rice or idli and dosa.

Ingredients
- 1/2 cup moong dal (split yellow moong beans)
- 1 cup radish, cut into small cubes
- 1/2 up radish greens or spinach, chopped fine
- 1/2 cup onions, cut into 1/2-inch strips
- 1/2 tsp turmeric powder
- 2 1/2 tsp sambar powder (store-bought like 777 brand or home-made)
- 1 tsp tamarind paste
- Salt to taste
For Seasoning
- 1 tsp vegetable oil
- Asafoetida powder, a pinch
- 1/2 tsp mustard seeds
- 5-6 curry leaves
Preparation
- Cook the moong dal in the pressure cooker with 1 cup of water and some turmeric powder for about 3 whistles.
- While the dal is cooking, heat 1 tsp oil in a deep saucepan. Add onions and saute for a minute or two.
- Add the radish and greens along with 2 cups of water and some salt and turmeric. Cover and cook on medium heat until the radish and onions are semi-cooked.
- Add the tamarind and cook for 2-3 minutes until the veggies are soft.
- Add the sambar powder and boil for 2 minutes until the raw flavor of the powder is gone.
- Mash the cooked dal and add to the veggies and remove from heat.
- Heat oil in a small pan for seasoning. Add hing and mustard seeds. As the seeds start to pop, add the curry leaves, and add this seasoning to the radish-greens sambar.
- Place the sambar back on the heat and let it come to a boil.
- Serve the radish-greens sambar hot with rice and pappadums.
