Sooran Kofta
Sooran Kofta is a delectable gravy dish with dumplings made with elephant yam and spices. This is a healthy and wholesome gravy curry to serve with roti or rice.

Ingredients
- 2 cups sooran (elephant yam), peeled, boiled and mashed
- 6 tsp besan (chickpea flour/bengal gram)
- Turmeric powder, a pinch
- 1 1/2 tbsp cilantro (coriander leaves), finely chopped
- 1 tsp red chilli powder or 2 small green chillies, finely chopped
- Salt to taste
- Vegetable oil for deep-frying
For Gravy
- 2 cups onions, chopped
- 1 cup coconut milk
- 2 cups water
- 3-4 tsp vegetable oil
- 1/2 tsp mustard seeds (rai)
- 1 tsp cumin seeds (jeera)
- Asafoetida powder, a pinch
- 4-5 curry leaves
- 1/4 tsp turmeric powder
- 2-3 tsp red chilli powder (adjust to taste)
- 2 tsp coriander-cumin powder (dhania-jeera)
- 1/2 tsp garam masala
- Salt to taste
Preparation
- For the kofta (dumplings), in a mixing bowl, mix the sooran with besan, turmeric, red chilli powder, and cilantro into a soft, smooth dough. Make small balls and deep-fry until golden or cook later in the gravy without deep-frying.
- In a small saute pan, heat 2 tsp oil and saute the onions until translucent and let cool. In a blender, grind the onions into a smooth paste.
- Heat the remaining oil in a deep and wide skillet, and add the mustard seeds. As they start to pop, add the cumin and asafoetida and fry until the cumin seeds turn golden.
- Add the curry leaves and onion paste and saute on medium heat for 3-4 minutes.
- Add the salt, turmeric, dhania-jeera, garam masala, and red chilli powders and fry for a few seconds. Add 2 cups water and let boil once.
- Add the koftas and cook for 1-2 minutes.
- Stir in the coconut milk and cook for another few seconds.
- Remove from heat and garnish the sooran kofta with some chopped cilantro.
- Serve the sooran kofta hot with roti or rice.
