Spicy Vegetable Pasta is a tasty and healthy after-school snack for kids. You can use whole-wheat pasta and make it healthier.

This is an easy vegetarian/vegan recipe you can put together very quickly. If you’re looking for ideas to spice up your pasta and try something different, try this recipe.

This spicy vegetable pasta dish serves as very filling and satisfying snack or light meal.

Ingredients

  • 1 1/4 cups rotini pasta (you can use whole-wheat pasta if you want)
  • 1/2 cup onions, finely chopped
  • 1/2 cup carrots, cut into small cubes
  • 1/2 cup bell-pepper, cut into small cubes
  • 1/2 tsp cumin seeds (jeera)
  • 1/2 tsp pav-bhaji masala powder or garam masala (available in Indian grocery stores)
  • 1/4 tsp red chilli powder (optional)
  • 3 tsp vegetable oil
  • 1 tsp cilantro (coriander leaves)
  • Salt to taste

Preparation

  1. In a large saucepan, bring about 6 cups of water to boil (or follow the package directions for cooking the pasta). Add a little salt if you want and add the pasta.
  2. Boil the pasta until it’s almost cooked (al dente); should be soft but still a little chewy. Drain and cool the pasta.
  3. Heat oil in a skillet. Add the cumin seeds and fry until browned.
  4. Add the onions and saute on medium heat for 2 minutes. Then add the bell-pepper and carrot with some salt and saute until the vegetables are tender.
  5. Add the pav-bhaji masala and red chilli powder and fry for 2-3 minutes.
  6. Add the pasta and mix well and cook for a couple minutes.
  7. Garnish the spicy vegetable pasta with chopped cilantro and serve immediately.
