Arvi Soft Curry

Arvi Soft Curry is filling and nutritious. Arvi or colocasia or taro root is rich in vitamins and minerals such as vitamin A, riboflavin, and niacin that are great for skin health.

This is an easy vegetarian/vegan recipe.

Servings: 4
Cooking Time: 15-20 minutes

Ingredients

  • 4 1/2 cups arvi (colocasia/chamadumpa/seppankilangu), cut into 1/2-inch cubes
  • Turmeric powder, a pinch
  • Salt to taste

For Seasoning

  • 4 tsp vegetable oil
  • 2 tsp urad dal (split black gram)
  • 1 tsp mustard seeds (rai)
  • 3-4 red chillies, brokein into a few pieces
  • 1/4 tsp red chilli powder
  • 5-6 curry leaves
  • 1/4 tsp tamarind paste (optional)

Preparation

  1. In a microwave-safe bowl, cook the arvi with 2 1/2-3 cups water, salt and turmeric until tender. Or boil the arvi separately.
  2. Heat the oil in a skillet. Add the urad dal and fry until almost golden. Add the mustard seeds and red chillies. As the seeds start to pop, add the curry leaves and red chilli powder, tamarind paste, and fry for a second.
  3. Add the arvi with a little of the water in which they were cooked. Stir well and add salt if needed.
  4. Cover and cook on medium heat for 2 minutes. Remove the lid and let any moisture evaporate.
  5. Serve the arvi soft curry with rice.
