Eggless Apple Streusel Cake

The Eggless Apple Streusel Cake is wonderful to serve as dessert or as a coffee cake. What a great way to use up those delicious apples you picked at the orchard! This cake is a healthy treat.

Servings: 8-10
Cooking Time: 1 hour, 20 minutes

Ingredients

For Cake

  • 2 cups all-purpose flour (maida)
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ginger, grated
  • 1 tsp cinnamon powder
  • 3/4 cup maple syrup
  • 1/3 cup vegetable oil
  • 1 cup water
  • 2 tbsp apple cider vinegar
  • 2 tsp vanilla extract

For Filling

  • 2 medium apples, peeled and diced a 1/4-inch pieces (about 2-2 1/2 cups)
  • 1/2 cup walnuts, toasted and chopped
  • 1 tsp cinnamon powder
  • 1 tbsp vegetable oil

For Streusel

  • 1 cup all-purpose flour
  • 1/2 cup regular cane sugar or maple sugar
  • Salt, a pinch
  • 1 tsp cinnamon powder
  • 1/2 tsp baking powder
  • 6 tbsp vegetable oil

Preparation

The Cake

  1. Preheat the oven to 350°F. Brush oil on a 9-inch spring-form cake pan and set aside.
  2. Sift the flour, baking soda, baking powder, salt, and cinnamon a couple of times.
  3. In a large bowl, add the oil, maple syrup, water, vinegar, vanilla, ginger, and salt and whisk until well-blended. You can use a blender for this.
  4. Stir in the flour mixture and whisk until all ingredients are mixed thoroughly, and set aside.

The Filling

  1. Heat 1 tsp oil in a skillet and saute the apples on medium heat for about 3 minutes or until tender.
  2. Remove in a bowl, and add the walnuts and cinnamon and toss until all the pieces are well-coated, and set aside.

The Streusel

  1. In a medium bowl, combine the flour, salt, baking powder, sugar, and cinnamon. Add the oil slowly and mix with your fingers until a crumbly, sand-like mixture is formed.
  2. Add a few drops of water if needed, and set aside.

Assembling the Cake

  1. Pour half the cake batter into the cake pan.
  2. Add the filling, distributing evenly.
  3. Pour the remaing batter on top, making sure the filling is covered completely.
  4. Sprinkle the streusel on top evenly.
  5. Bake in the center rack of the oven for 60 minutes, or until a knife inserted into the cake comes out dry.
  6. Remove the eggless apple streusel cake from the oven, and cool for about 30 minutes.
  7. Remove the eggless apple streusel cake from the pan and let cool completely before serving. Wrap the remaining cake in plastic and store in a cool place.
