Rava Kesari
Made with cream of wheat (semolina, sooji), milk, and nuts, Rava Kesari is a dessert that’s full of nutrition. It’s also very easy to make. The kesari (saffron) makes it a colorful dish to add to your table.

Ingredients
- 1 cup medium rava (cream of wheat, semolina, sooji)
- 2 cups milk
- 2 cups sugar
- 1/2 cup ghee (clarified butter) or vegetable oil
- 10 cashew nuts (or as needed)
- 20 raisins (or as needed)
- 2 tsp cardamom powder
- Saffron, a few strands, dissolved in a little milk
Preparation
- Heat oil or ghee in a small pan, and fry the cashew nuts until golden and remove. Fry the raisins until they fluff up and remove.
- In a wide skillet, heat the ghee, and saute the rava on medium heat until golden and aromatic.
- Add the milk and cook on low heat, stirring constantly.
- Add the sugar, and cook until it’s dissolved, and the rava comes off the sides of the pan.
- Add the cardamom powder and saffron milk, and stir for a minute.
- Stir in the cashews and raisins and serve the rava kesari warm or chilled.
