Rava Kesari

Made with cream of wheat (semolina, sooji), milk, and nuts, Rava Kesari is a dessert that’s full of nutrition. It’s also very easy to make. The kesari (saffron) makes it a colorful dish to add to your table.

Servings: 8-10
Cooking Time: 50-60 minutes

Ingredients

  • 1 cup medium rava (cream of wheat, semolina, sooji)
  • 2 cups milk
  • 2 cups sugar
  • 1/2 cup ghee (clarified butter) or vegetable oil
  • 10 cashew nuts (or as needed)
  • 20 raisins (or as needed)
  • 2 tsp cardamom powder
  • Saffron, a few strands, dissolved in a little milk

Preparation

  1. Heat oil or ghee in a small pan, and fry the cashew nuts until golden and remove. Fry the raisins until they fluff up and remove.
  2. In a wide skillet, heat the ghee, and saute the rava on medium heat until golden and aromatic.
  3. Add the milk and cook on low heat, stirring constantly.
  4. Add the sugar, and cook until it’s dissolved, and the rava comes off the sides of the pan.
  5. Add the cardamom powder and saffron milk, and stir for a minute.
  6. Stir in the cashews and raisins and serve the rava kesari warm or chilled.
