Cauliflower fritters or phoolgobhi bhajia is a tasty snack that can be made quickly. These vegetarian fritters are a great way to include some veggies in your snack. These fritters are a great after-school snack for kids. Served with ketchup, these would be a big hit with kids.

These fritters are quite healthy, despite being deep-fried, because they are made with besan or chickpea flour which is rich in protein and fiber.

Servings: 3-4 (makes about 20)
Cooking Time: 20 minutes

Ingredients

  • 20 cauliflower florets, medium-sized
  • Vegetable oil for deep-frying

For Batter

  • 1 1/4 cups besan (bengal gram/chickpea flour)
  • Baking soda, a large pinch
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1/2 tsp ajwain seeds (carom seeds)
  • 1/2 tsp cumin seeds (jeera)
  • 2 tbsp cilantro (coriander leaves), finely chopped
  • 2 tbsp methi (fenugreek leaves), fresh or dried (kasuri methi)
  • Salt to taste

Preparation

  1. In a large bowl, mix all the batter ingredients into a thick batter with as much water as needed.
  2. Heat oil in a deep frying pan. When the oil starts to smoke, dip each cauliflower floret into the batter, making sure it’s completely coated, and gently drop into the oil. Repeat until you have about 5-6 fritters in the oil. Fry on medium-high heat until golden brown and crisp.
  3. Repeat with the remaining florets, adjusting the heat as needed.
  4. Drain the cauliflower fritters on a paper towel.
  5. Serve the cauliflower fritters hot with some tomato sauce/kethcup or some mint-cilantro dip and a cup of hot tea or coffee.
